A detailed process to transform raw cocoa pods into homemade chocolate, involving fermentation, drying, roasting, grinding, and tempering the cocoa beans.
1. Open cocoa pods and extract the beans.
2. Place the beans in a container in a warm place (40-45°C), covering them with banana leaves (or parchment paper) for 5-7 days to ferment.
3. After fermentation, spread the beans under the sun for another 5-7 days to dry.
4. Roast the dried beans at 120°C (248°F) until they are fragrant.
5. Remove the shells from the roasted beans and collect the nibs.
6. Grind the cocoa nibs into a smooth paste.
7. Heat and stir the cocoa paste, optionally adding sugar and milk, until it becomes smooth.
8. Cool and then reheat the chocolate to stabilize its crystals (tempering).
9. Pour the tempered chocolate into molds and cool to solidify.
