A delicious Shrimp Scampi pasta dish featuring spaghetti, raw shrimp, garlic, butter, shallots, and cherry tomatoes, finished with white wine and parsley. Perfect for a special occasion like Father's Day.
Boil water in a medium saucepan. Salt water and add spaghetti. Cook spaghetti until aldente, that is, a quarter of the time less than indicated on the package. In our case, cook for 8 minutes, then drain the water and set aside. Cut 2 shallots lengthwise into thin strips. Finely chop 4 garlic cloves. Finely chop one chilli pepper. Cut cherry tomatoes in half. Finely chop a bunch of parsley. Grate a tablespoon of lemon peel. Remove shell from shrimps. Put a piece of butter in a well-heated deep frying pan and add olive oil. Put the shrimp in the pan and fry on both sides for 2 minutes. Then remove the shrimp from the pan and set aside. Put the shallots in the same oil and fry until golden. Then add cherry tomatoes, garlic, chilli pepper and fry for about 5 minutes, stirring constantly. Pour 1/2 cup of white wine over and simmer for a couple of minutes. Add 2 Tbsp butter and melt it. At the end, add chopped parsley, mix and immediately add shrimp, mix and add salt and pepper to taste. Add spaghetti to al dente and mix well. Place on a plate and sprinkle with Parmesan cheese.
